Weekly Recipe Round-Up March 3-7, 2014

This was a big week at 
The Fork Ran Away with the Spoon as we celebrated our Food Blog's One Year Anniversary. We've posted over 180 recipes and are looking forward to posting many more in the new year.  Having the support and kind words, likes and shares from our followers and fellow food blogger has made it all worth while, especially at moments when we wondered if it was worth it. And you know what? It sure is! Thank you all for your continued support!

Don't forget to spring forward this weekend as we catapult into daylight savings time in the U.S. I for one am happy about the time change.  It's been really hard to go out running because by the time I get home from work it's late and it's dark. I am not a good night time runner, not to mention that the park I run at has lights off by sundown. The time change also means I have time to photograph my recipes with natural lighting and that alone is good reason enough! I think this week may be the last of the "cold" weather in South Florida and that I will miss dearly but as the famous philosopher Jagger once said "... you get what you need".

Red Curry & Coconut Lentil Soup

This is an easy to prep and cook soup that's perfects for weeknight meals. It's vegetarian, spicy, thick, rich in flavor yet light. Loaded with carrots and potatoes, fiber rich red lentils and lots of warm spices.  Makes a big batch, enough for two meals, so you can eat one, freeze one.

Caramelized Ginger Chicken

The chicken is seared over high heat then simmered in a rich sauce of ginger, soy, shallots and garlic. Truly delicious!

The perfect quintessential classic Spanish meal. The mix of various seafood is simmered in a sauce that is first infused with tomatoes, onions, peppers, lots of garlic and of course saffron, then thickened with ground almonds and enriched with seafood stock and sherry. Finally it is quickly flambe'd with brandy and sprinkled with parsley.

Weekly Recipe Round-Up - Valentine's Week

It was Valentine's Day week and that meant celebrating with food and romance at The Fork Ran Away with the SpoonMonday started with a 3-course dinner, Wednesday a classic (think Lady and the Tramp) spaghetti and seared chicken and the grand finale on Friday, a decadent chocolate cheesecake. The best part is you don't have to wait till next Valentine's to make these great recipes, you can stir up romance and a romantic dinner any day. We hope you had a great week and an even sweeter Valentine's.

Weekly Recipe Round-up January 20-24, 2014

It was a week of soups and stews at The Fork Ran Away with the Spoon. Temperatures dropped into the low 40s and high 30s in South Florida. This called for a lot of warm and homey comfort food and coincidentally they all seemed to have a Spanish/Latin flair too!

Jax's Chili is a chili I've been making for years and has become one of my favorite go-to recipes once the temperatures dip. Using cachucha peppers, red chilies, 3 different types of beans and cocoa powder, the stage is set for the ultimate comfort food. Can be made stove top or in slow cooker I cover both methods in this recipe.

In *Cuban Meat & Potato Stew* (a.k.a. *Carne con Papa*) the meat and potatoes are simmered in wine, tomato sauce, garlic and paprika,is a big family favorite. Served with steaming white rice and fried green or sweet plantains  makes it *a classic Cuban Sunday dinner*.

My recipe for Iberian-Inspired Chorizo, Cod and Chickpea Stew is rich, warm and spicy. This tomato based stew brings together the flavors of paprika rich Spanish chorizo, cod fish and chickpeas. Perfect cold weather soup!

Weekly Recipe Round-up January 13-17, 2014

Temperatures really dipped in South Florida this week, low 40s and high 30s in my neck of the woods.  I covered up all veggies and pepper plants because I've put a lot of work into that garden and I sure wasn't going to let a little frost ruin my beautiful crops. I was able to get out on the pavement and run about 8-9 miles this week and that really felt good, cold and all and after each run a really good meal was waiting for me when I got home.  I just LOVE my slow cooker. This was perfect soup and comfort food weather and that's what we featured this week at The Fork Ran Away with the Spoon.

One of my favorite way to cook fish is in parchment. If you have never tried it ... you are in for a treat! Why cook in parchment? First, it guarantees a super moist and delicious fish. Second, there is virtually no clean-up of pans. The infusion of paprika, lemon and garlic is one of my favorites for many recipes but with fish it is simply divine.

Weekly Recipe Round-Up January 6 - 10, 2014

Finally, life back to normal, or at least as close to normal as possible! I hope you had a great first full week of the new year.  We got back to our regular posting schedule, including Wednesdays with Eryka. For me it was easing back into a routine and even welcoming back some of our favorites shows that had been on hiatus during the holidays. And while I haven't gotten back to running, the weather was just horrible here in South Florida, nothing like that polar vortex the northern states got hit with, just a lot of rain and few days of "cold". It was just impossible to get out there and jog a few miles. But there is always next week or I  may head out tomorrow morning for a quick run, weather permitting.

The sauce in this recipe is just as delicious with the meatballs as it is on its own ladled over pasta or egg noodles. Letting the onions and mushrooms cook together brings about a depth a flavor that only slow and low cooking can bring about.

Ground beef, pork and Italian sausage are simmered in wine, stock and spices and one of the spices may surprise you..One pound of cheese make this pasta this pasta dish super cheesy and yummy!

Bacon & Ham Braised Greens
Now I know what you are thinking, ugh... greens, right?  Nooooo, I promise, no ughs here!  We are using smokey bacon, ham, ham hocks and shanks, rich stock, and letting them all braise with your greens of choice for hours in a slow cooker. What you get is smokey-bacon-ham-y goodness that you can eat alone or over pasta, beans, legumes or my favorite with a loaf of toasted french bread and white wine.

Weekly Recipe Round-Up December 30, 2013 - January 3, 2014

This was an odd week, with a break right smack in the middle for New Years, and then back to work for the rest of the week.  It really threw me off, I couldn't seem to get into the swing of things. The first official full week of the new year, will see me back to running 3 - 4 times a week (I miss my running) and lot more meal planning.  The holidays just ran right over me and at one point I just gave up on everything! It's time to get back on track.

The ingredients for the stuffing, turkey, cream cheese greens, are fairly straightforward but when put together they create a creamy, luscious meal that your family will want often. The use of ground turkey really lightens up the crepes and keeps the meal feeling light. Pair it with a light salad, a glass of white wine and you have a well-rounded and satisfying meal.

This classic Cuban recipe, Monteria, uses left over Cuban roast pork, and is cooked in onion, peppers, garlic, seasoned with oregano and cumin. It is then simmered with raisin, olives, capers and a tomato-y "vino seco" sauce. It's absolutely delicious and the aroma will having you wanting to dig in ASAP!

Weekly Recipe Round-Up November 25th - 29th

I don't know about you but this week has just flown by for me.  And I was really not quite ready for Thanksgiving, I didn't even get the disposable bakeware that I usually use to take the side dishes to my brother's, (fondly named Mr. Ed) house. Thanksgiving is always at Mr. Ed's house and Christmas Eve dinner is always at my house.  It's what we have been doing since the passing of our parents. This holiday always reminds me of my father in particular, he loved having the family all around the dinner table, everyone talking over each other, the noise level getting almost unbearable (it's a Cuban family after all). It made him very happy, and I miss seeing him, his face glowing with happiness, because his family was there with him, and that meant everything to him.
I do hope you have fond memories as I do and that you had a beautiful Thanksgiving!

In less than a week most of us will be sitting down to a great Thanksgiving dinner with family and friends, and this year I am really behind on everything. I have a lot of catching up to do this coming week, just not sure how I am going to get it all done, but I will.

In  this recipe I use juicy, tender turkey thighs, that are smothered in mustard, then braised in beer with fresh thyme and caramelized onions. And what you get is the nothing short of spectacular, deep flavor. Even people who say they don't like turkey, like this turkey. It's simply that good. Adapts to slow cooker or stove top cooking, easy to make and budget friendly.

Potaje de Garbanzo / Cuban Chickpea and Chorizo Stew

The recent "cool" weather inspired me to make one of my favorite Cuban potajes (stew) ... Potaje de Garbanzo.  I think of a potaje (poe-tah-hey) as not quite a soup, not quite a stew and not quite a porridge. It's a hearty chickpeas (garbanzo), simmered with Spanish chorizo, ham, smoked pork shank, Cuban calabaza and potatoes. To me, the perfect spoonful has a piece of chorizo, calabaza, and chickpea swimming in the smokey, paprika infused tomato-y broth.

Zippy Ketchup and Mustard Chicken

It may surprise you that the main condiments used to cook the chicken in this recipe are ketchup and mustard. It's an incredibly easy to make, budget friendly and mostly importantly absolutely delicious dish - and that's makes it's a Wednesdays with Eryka recipe.

Grilled Chicken with Corkscrew Pasta in Preserved Lemon and Garlic Sauce

This recipe starts by marinating the chicken in preserved lemon, the lemon brine and lots of garlic. It is then grilled to perfection. While your pasta cooks you create a luscious, lemon and garlic infused creamy sauce that will coat the ridged, corkscrew pasta. Those lovely ridges are what help hold the sauce onto the pasta and deliver the most amazing bite.

This was an exciting week at The Fork Ran Away with the Spoon! New schedules in our lives prompted a few changes and a more consistent posting schedule. We will now be posting Mondays, Wednesdays and Friday, and will feature a new Weekly Recipe Round-Up every Saturday or Sunday.

Once you've made them, you'll never pay ridiculous amounts of money for a tiny jar again. Takes all of 10 minutes to prep and what you get is briny, tart, a little sweet and the most intense lemon flavor you can possibly imagine.
